Undergrowth, twigs, fresh cherries, a touch of violet, maybe even into boysenberry. A gentle meatiness too. It has a dry, tannic finish; perfect for the dinner table. It doesn’t have a lot of power but it still manages to fit a lot in. It’s been well packed. Each year winemakers from Devaux travel to Australia to assist with assemblage, whilst Yering Station winemakers continue to travel to Champagne for September vintage to gain long established sparkling wine education and understanding.
