Sangiovese, Tempranillo and Grenache was crushed, chilled and held cold soaking separately in the press in order to extract vibrant red berry flavours from the skins. The juices were cold settled and fermented separately prior to careful blending, stabilisation, clarification and bottling. Very slight residual sweetness remains in order to enhance the natural fruit characters.
In addition to the wines under the Tim Adams label, Tim Adams launched the 'Mr Mick' range of wines following the purchase of the famous Leasingham winery. This range is named in honour of K.H Knappstein aka 'Mr Mick'; a legend of Australian wine and a former mentor of Tim Adams. These wines offer fine examples of the varieties Tim and the Clare Valley do best along with some emerging, less conventional varietals.
Some current standouts in the Mr Mick range include their Vermentino, Pinot Grigio, Riesling, Cabernet Merlot, Shiraz along with a very impressive Tempranillo - these all offer approachable, flavoursome styles at very reasonable prices.
