Serrat is the family winery of Yabby Lake winemaker Tom Carson and partner Nadege Suné. Serrat has 8,800 vines per hectare - more than four times the average density, however their vines carry only a few bunches each. Remarkably, it takes one vine to produce each bottle of Serrat wine; these are genuine, hand-crafted wines of the highest quality.
Serrat Pinot Noir has gained a huge following and is always one of Australia's most sought-after Pinot Noir. The 2025 Serrat Pinot Noir is another sublime example; fragrant, with a silky mouthfeel and a palate packed vibrant red fruit flavours and lovely savoury undertones. "97 Points. 25% whole bunches and matured in 500L French oak casks (25% new). A medium-bright crimson ruby. In contrast to the more delicate, fragrant Nenagh Park Pinot, Serrat's home block has produced a wine with aromas of black cherry, blood orange, rosebush and graphite. The palate is medium bodied, concentrated and with chiselled tannins that augur well for anyone who still has a bottle or three in their cellar eight to 10 years from now. 13.5% alc. "This wine is sourced predominantly from the MV6 Pinot Noir clone, together with a proportion of newer plantings of 828, 943 and Pommard. We included around 30% whole bunch in the ferments in 2025, giving the wine a punchy and fragrant aromatic profile that evolves beautifully as it sits in the glass. The wine was aged on lees for 11 months in 500 litre French oak puncheons from Tonnellerie de Mercurey, 30% new, using a mix of Tronçais and Pierre selections, oak sourced from very rocky ground that produces exceptionally fine grain. The bouquet is highlighted by cherry and spice, layered with a spectrum of red fruits, strawberry and raspberry, alongside detailed floral notes and lifted fragrance. The new clones are adding an extra level of extract and tannic concentration which is exciting, the palate is tightly wound but underneath a silky and voluminous mouthfeel.
