Paringa Estate aim to make Pinot Gris with personality; a wine that has bright fruit flavours and a textured palate. To achieve this style, they tank ferment two thirds of the juice at low temperatures, which allows the aromas and fresh fruit flavours to develop. The remaining juice is barrel fermented with wild yeast, which adds texture and complexity.
